'Cook with Cous Cous' - A quick and easy recipe for a healthy meal. You can also mix it up with some salad leaves or serve as a side dish. Enjoy!
RECIPE
Ingredients:
1 small onion
2 garlic cloves
1 red pepper
½ courgette
8 x cherry tomatoes
30g flaked almonds
50g sultanas
300ml veg stock
200g couscous
Handful chopped chives
1tsp cumin
1tsp coriander
1tsp smoked paprika
Pinch cinnamon
2 cardamom pods
Method:
1. Toast the almonds and set aside.
2. In a separate pan, fry the onions then add the garlic, butter and season.
3. Add the diced peppers, courgette, tomatoes and sultanas, and cook for a few minutes.
4. Pour in the stock and when it comes to the boil stir in the couscous mixed with the spices.
5. Cover and set aside for 5 mins until all the water is absorbed.
6. Stir in ¾ of the toasted almonds saving the rest for garnish.
7. Serve with natural yoghurt and the rest of the flaked almonds.
Alternatives:
Try tossing the couscous with salad leaves and dressing for a hearty salad. Instead of plain yoghurt use homemade tzatziki, or season the yoghurt with smoked sea salt for a deep earthy flavour.
