Tenderloin with a port and sage sauce

This is a dish which includes all the best flavours to go with pork.

* Prepare the salade
- Chop the chicory jullienne
- Chop the apple fine with, make sure that every little part has a little green on it.
- Crush the pecans
- Mix the ingredients
- Place the salade in a mold
- Let it cool down, this will help it keep its shope

* Prepare the basting sauce
- Mix the ingredients
- Use a brush to baste

* Prepare the port and sage sauce
- Chop the shallot and garlic clove fine
- Softne the shallot and garlic in a little butter
- add the rest of the ingredients and let it boil down to about 150 ml

* Smoke the tenderloin
- Do a reversed sear on this tenderloin
- Use applewood the smoke this tenderloin
* Grill the tenderloin and baste it with the basting sauce
* Plate up and enjoy

Ingredients salade:
* 1 Chicory
* 1/2 Granny smith apple
* Pecan a handfull
* Raisins a handfull
* 3 table spoons of mayonaisse

Ingredients bastings sauce:
* 2 tablespoons beef stock
* 2 tablespoons honey

Ingredients port and sage sauce:
* Fresh sage
* 150 ml port
* 350 ml beef stock
* 2 tablespoons red wine vinager
* 1 shallot
* 1 small garlic glove
