Hi guys! I went overseas recently and did a huge vegan meal prep for my fiancé so he would have lots of healthy vegan meals ready to go for work or dinner. I made three different dishes at the same time - a vegan Thai green vegetable curry, vegan goulash with smoked tofu and some vegan Indian dahl. Very simple but all very yummy.
