Welcome to the second season of Francis Fancies Food.
If you're gonna ask me why I'm looking at you like that it's because I'm so happy that you showed up for a second season.
And I almost would cry, but we don't do that here.
We cook food! So lets get started.
Specialty Chicken and Waffles Skills: Deep Frying
Ingredients: 4 Carrots, 1 handful of Parsley, 1 Lemon, 4 boneless Chicken Thighs, 4 cups of Flour, 3 Eggs, Salt, Pepper
Thyme, Paprika, Rosemary, Basil, Chili Powder, 1 liter of Canola oil, 1 tbsp of Butter, 2 Habanero Peppers, 1 Quart Maple Syrup
First, start off by getting everything ready. You should turn on your waffle iron and place 1 liter of canola or vegetable oil in a large pot and turn on the heat to medium-high.
Make sure to leave about 1.5-2 inches of space from the top of the pot; this ensures no spilling or overflowing once you put all of your chicken in the hot oil.
Next, start grating down your carrots with any standard size cheese grater. Directly after that place them in a bowl and squeeze out all of the juices from the shredded carrots.
The goal is to leave as little liquid as possible. This will ensure a crispy waffle!
fter all the liquid is pressed out, add your spices. We recommend ¾ tsp paprika, rosemary, basil respectively and salt and pepper to taste.
Also add in 1 egg and a large pinch of flour to help bind your ingredients. Squeeze approximately 1 TSP of lemon juice in at the end to add a small amount of flavor.
Mix thoroughly until everything is evenly incorporated and then add into your waffle iron. Make sure to add some non-stick spray t your waffle iron beforehand to ensure there’s no sticking.
This recipe should yield about three sizeable carrot waffles.These will cook for approximately 10 minutes or until golden brown and crispy.
While the waffle is cooking, cut up your chicken thighs into bite-sized pieces and throw them in a bowl.
Add your spices to this bowl. We recommend using paprika, fresh rosemary, basil, thyme, chili powder and salt and pepper to taste. Everyone likes their chicken seasoned differently but we recommend 1 tbsp of each in order to achieve a good flavor profile.

After mixing properly it’s time to set up the breading station.
Place three bowls side by side and fill the first one with 2 cups of flour, the second one with ½ cup of whole milk and 2 eggs, and the final one with 2 cups of flour as well, but also an equal amount of the same spices you used in the chicken.
Remember to check your waffle! And if it’s finished, simply grab a pair of tongs and remove it from the waffle iron. Be gentle, as it could fall apart if you’re too rough!

When you are frying things don't stick both of your hands in the batter
The dry plates and the wet plates at the same time
What's going to happen is you're going to end up with club fingers.
Those disgusting large, huge, bulbous things that happen when batter becomes one solid mass on your fingers
You don't want that. I don't either, I want to see you succeed!
And make chicken and waffles.
So don't do it!
To bread a piece of the chicken, simply roll it in the first dish of flour and shake off the excess, then use your other hand to drop it into the wet ingredients and coat it, then finally it should go in the last dish with flour and coated evenly.
After this breading process is complete, lower it slowly into the hot oil.

The chicken should be fired for 4-6 minutes or until golden brown.Once finished, remove from the oil and put on a paper towel lined plate in order to soak up the oil.

Lastly, we have to make the habanero maple syrup, Simply take 1 tbsp of butter and place it in a large saucepan on medium-low heat.
Then once melted a bit, add in 1 habanero that has been diced. Sautee until fragrant and the butter is slightly brown.
When this is achieved, add in your maple syrup and reduce heat to a solid low temperature. Let this combine and work around each other for about 4-5 minutes; making sure to keep an eye on it so your syrup doesn’t thicken up too much.
Once, everything is finished and the chicken has rested for 2-3 minutes, it’s time to plate!
Take your waffles, and layer them one over the other. Then add 4-5 pieces of chicken on top and finish with a light drizzle of the habanero syrup. Garnish with carrot tops for an extra flare!
