    The Executive Chef catering presents la Alta Cucina Video recipe series with chef Ron
    Fresh Veggie Burger Sliders - Episode 1i.
    Chef Ron and Robin do some outdoor cookin' after a visit to the local farmers market, prepare fresh veggie burgers (vegan) on the grille.
    1 yellow squash
    1 green squash
    1 very large carrot
    Cup tofu
    3 scallion stalk
    2 garlic cloves
    6 sundried tomato
    bunch watercress
    basil top
    horseradish root (2 TSP)
    1 & 1/2 cups crumbed croutons (tri-color)
    2 oz XV olive oil
    red, yellow, green & orange Holland bell pepper (1/2 each)
    1 tsp Italian seasoning (thyme, basil, chervil)
    2 Tsp Dijon mustard
    3 ripe Roma Tomato
    salt & pepper (taste)
    vinegar (taste)
    12 small dinner rolls (preference)

    In a 2 qt food processor:
    med fine chop squash, carrots, garlic, shallot
    press liquid out thru a sieve (reserve for soup, beverage, or whatever you might do with some juice)
    squeeze tofu in cheese cloth or paper towel as dry as possible
    Add to processor with fine slivered horseradish root, scallion, sundried tomato, and 2/3 of the watercress
    process thru with 1st batch of veggies, add mustard, spices, herbs
    transfer into large bowl, fold thru crouton crumbs, add in olive oil until sliders can be easily formed into approximately 3 inch (2 oz) patties
    spray with veggie oil on both sides, and grill on HI HEAT, about 90 seconds each side, until firm
    serve immediately topped with watercress & Roma tomato slices dressed with XV olive oil, sea salt & a dash or two of your favorite vinegar

    Slap some dead in the 8 track, & serve with electric kool-aid Show less
