Recipe...
For the strawberry goo - 
400g strawberries, hulled
50g caster sugar

For the meringues-
4 egg whites, weighed
double that weight in caster sugar
pinch of salt
drop of vanilla extract

For the sponge - 
125g unsalted butter, soft
125g self raising flour
125g caster sugar
2 lg eggs
1/4 tsp bicarbonate of soda
1.5 tbsp milk + 1/4 tsp vanilla
a few spoons of strawberry goo

For the buttercream - 
100g unsalted butter, soft
225g icing sugar, sifted
a few meringues
goo!

Recipe - 
For the chocolate shortcrust pastry...
225g plain flour
20g cocoa powder
2 tbsp icing sugar, sifted
pinch of salt
150g very cold butter, unsalted
3 tbsp ice-cold water

For the Salted Caramel custard filling...
110g caster sugar
45ml water
400ml double cream
pinch of salt
1 egg + 3 egg yolks

For the topping
1-2 bananas
150g double cream
75g creme fraiche
dark chocolate for grating on top

A 'Short' pastry should be sturdy enough to hold a filling, but light, snappy and slightly crumbly too so it melts in your mouth. This is my FAIL-SAFE Shortcrust Pastry recipe, plus a demo on how to 'Blind Bake' at tart or pie shell so that you can fill it with yummy stuff!

Recipe -
For the cupcakes...
125g self raising flour
125g caster sugar
125g soft unsalted butter
1/4 tsp bicarbonate of soda
2 lg eggs
1.5 tbsp very strong coffee, ideally espresso

For the filling...
75g double cream
1 tsp caster sugar
1.5 tbsp very strong coffee, ideally espresso

For the Mascarpone icing...
75g soft unsalted butter
120g mascarpone
420g icing sugar, sifted

Cocoa powder to finish!

Recipe - 
For the Regular Granola

400g rolled/porridge oats
100g pumpkin seeds
100g sunflower seeds
50g sesame seeds
50g flaked coconut
100g almonds
125ml sunflower oil
250ml honey
50g soft brown sugar
125ml water
1/8 tsp cinnamon 
1/2 tsp salt
1/4 tsp vanilla extract

For the low-sugar Granola
300g rolled/porridge oats
100g almonds
120g pumpkin seeds
30g sesame seeds
50g cacao nibs
30g golden or brown linseeds
4 tbsp coconut oil
125ml apple juice, as natural as possible
75g agave

   <media:description>Nothing says Summer like the combo of Mango and Coconut. It's like a sunny, tropical punch in the face! For a soft, pillowy punch, why not make cupcakes with these two Summer flavour heroes! I did and it felt GREAT!

Recipe - 
For the Mango Curd...
5 egg yolks + 1 whole egg
110g sugar
1.5 lime juice
110g pureed mango
60g cold chopped butter

For the cupcakes...
125g self raising flour
125g caster sugar
1/4 tsp bicarbonate of soda
25g dessicated, toasted coconut
zest of 1 lime
135g soft, unsalted butter
2 lg free range eggs
2 tbsp coconut cream

For the coconut swiss meringue buttercream...
3 lg egg whites
225g caster sugar
300g very soft unsalted butter
3-4 tbsp coconut flavour + coconut extract if you want

Toasted coconut flakes to decorate!

For the churros-
375ml water
1 tbs olive oil
1 tbs caster sugar
pinch of salt
210g strong bread flour
1 tsp baking powder
OIL for frying

For the chocolate ganache-
100g dark 70% chocolate
125g double cream
