1 cup Chef’s Choice Israeli pearl couscous
1.5 cup water
5-6 Chef’s Choice Artichoke hearts
10-12 Chef’s Choice Kalamata olives
1/2 bunch Mint
1/2 bunch Parsley
10-12 Cherry tomatoes
5-6 Bocconcini cheese
Salt & pepper
1. Empty couscous into a saucepan and add water. Simmer for 15 minutes. Drain and let cool for 5 minutes
2. Chop Cucumber, Parsley, Mint and Cherry Tomatoes, and place in a serving bowl. Add olives, artichokes hearts and bocconcini cheese.
3. Add olive oil, lemon and salt and pepper to season. Toss all together, separating the couscous as much as possible, and serve.
