Avocado Cake Recipe:
1 cup butter (room temperature)
1 cup white granulated sugar
1 tsp. vanilla
1 ripe avocado (or frozen thawed avocados)
1 tsp. lime juice
2 ¾ cup all-purpose flour
4 tsp. baking powder
Pinch of salt
4 tbs. milk
Mix butter, sugar and vanilla until light and fluffy. In separate container combine avocado and lime juice until smooth then add into wet mixture. Add in one egg at a time mixing after each addition until just combined. In separate bowl mix together dry ingredients. Add dry ingredients into wet ingredients in 3 additions alternating with the milk. Pour into 8” round 3” deep pan and bake at 350F for 45-60 minutes. Enjoy!!

This video is celebrating EVERYTHING #SurprisinglyDelicious! Now, I have always loved avocados. But I have never baked them in a cake recipe and paired them with a decadent chocolate buttercream. In this video we are changing that by combining yummy flavors in a new exciting way. Not only am I baking an actual avocado cake, but it is going to be an adorable 3D standing up kawaii anime avocado cake. As if that wasn’t good enough, I am making a chocolate sphere piñata surprise inside the cake filled with yummy chocolate covered fruit balls from Brookside. Covered in chocolatey icing and covered in colored fondant. To make sure this cake is extra structured I will also be tiering it. This delicious cake is going to look SO cute!!
