I think it'd look more aesthetically pleasing to strain out the muddled lime and and mint to put in a fresh slice of lime and mint. I mean it doesn't affect the flavor but it looks more appetizing in my opinion.

Cutting limes halves with the round side down (2:16)...ALL WRONG!! But he does have some good points. My rules are: Metal muddlers never go in glass vessels of any kind. Cut fruit with the flat side toward the board. Press with your muddlers to extract juice & essential oils, not pulverize. Delicate herbs go in after the citrus, after the hard shake. Sheik Your Booty.

The mint is definitely over-muddled. On top of that, he proceeds to give it a hard shake, further murdering the mint. Mint needs only a gentle press. I also agree with the comment that gravity alone just won't do it.

All very true a great muddle is an asset to every bar professional! Although if what he was making was a Mojito then it's all WRONG! YOU SHOULD NEVER MUDDLE MINT!!!!!!! It makes the drink bitter as you can see if you suck then chew the mint, it's the same when the oils have been bruised. Please don't do it, every informed patron will send it back.

I have a question...wouldn't you want to remove the beaten up lime peel before serving the drink? it would aestheticall better if theres an intact lime wedge on the rim...it would seem like a no-brainer to me!

Limeoil from the wedges might smell very nice, but they taste bitter. You should press on them at a maximum of 3-4 times.

Nice one. Specifically, you would muddle the lime first and then lightly muddle the mint, or, if going to shake with ice, don't muddle the mint at all. What do you think?

Weird that so many people are so uptight about how someone looks. Who cares. Ridiculous and extreme douchebag facial hair, I don't even know what that means, is there some cosmic law that determines that? I didn't even notice, I was too busy looking at the drink stuff. I'm not a bartender and he gave some good tips. There are also some good tips in the comments. Yours isn't one.

@wedacose totally agree, and a mojito doesn't need to be shaken. Thats just extracting more of the bitter take of the mint leaves but breaking it up that much.

Cool, I actually have the exact muddler he's using in this video, and it's really good. Since it has the little rubber nodules on it, it means it helps crush the stuff faster, so that means less work for you.

Do not muddle your mint! Muddling you mint will result in tiny pieces trough the entire drink, these little pieces will be small enough to go trough you straw into your mouth where you will be spitting them out. I recommend to put the mint into the palm of your hand a just applaud like you normally would 3x. Then put it in your drink a muddle it softly, do not rip the mint!!

This is all correct, however, in my opinion, mint is a delicate leaf and doesn't require you to pulverize it to get the flavors out. So what i would do here, is just muddle the lime only, then add the mint with cracked ice and shake it. The cracked ice (or better yet crushed ice) will act like shards and cut the mint and release the aromas. Nevertheless, great video!

Also they don't do any of this in cuba, the use lime juice, sugar syrup (white, not brown) and fresh clapped mint. Then lighty shaken with big ice or muddled lightly with the back of a bar spoon.

I use both kinds of muddlers. The wooden one (that this guy hates) I use for very gentle muddling... basically if I want to just give some mint leaves a few thumps to express the oil without shredding it. For more aggressive muddling I use a stainless steel/silicon muddler.
