Keep up the good work Mrr.  Eisman. Ignore the negative responses. most average minds have not the patience for true comprehension. I had to listen to this video thirty times due to my average level of intelligence. But honest i am. This video is very basic.. I now believe that i  know more about human nutrition and diet than most . Things are not as complicated as the bad guys would like you to believe. read what your bible says god gave us for food. gen. 1:29

Totally wrong, there is plenty of evidence that saturated fats cause negative health outcomes. They are implicated in raising insulin resistance and the onset of diabetes among other things. If you don't eat animal proteins and fats and instead eat starches like rice, pasta, potatoes, corn and bread you won't get fat. It's when you eat the animal products and especially dairy in conjunction that you get fat because you won't metabolize the carbohydrates well and your insulin stays high.

Contradiction much? You say an apple is a better choice than a Snickers bar, then proceed to talk about how unprocessed carbs are as bad as white rice and table sugar. You haven't researched any of this whatsoever. Even Robert Lustig, who's exposed the dangers of refined fructose, says that fruit is fine because of the fiber. Unprocessed carbs like fruit, whole grains, and legumes are anti-inflammatory and fight free radicals. The biggest sources of AGEs are animal products and oil.

Interesting speech. He just listed ten reasons why Atkins diet works. It worked for me; I lost on Atkins 120 pounds in 6 months; after being vegetarian for 20 years. Now, I'm eating the best of both worlds: I don't eat animal products except for seafood, no diary and the most important: NO WHEAT and NO SUGAR. And what experts don't understand: for most of us losing weight without protein as a stabilizer, is illusion.

Yes and apple is healthier than a snickers bars and is a better choice. But still has Fructose which causes all kinds of problems. Even coming from fruits and yes Processed Sugary Foods should be avoided. Unprocessed carbs are still pretty much like white rice and table sugar. Still raises blood sugar which leads to AGE Free Radicals Inflammation and Scarring. Just less of a damaging effect compared to process carbs.

I am from Pakistan, may be its different with our genes, plus we had always drank baffalo milk without any processing. Non at all. The milk comes from the baffalo, its boiled and cooled, due to which all the cream rises on top, which is then collected off of the milk and the milk is then consumed. Non of the people I know have ever had any adverse reaction to milk

Yes, this is because vegans and vegetarians like to attack Atkins, while they are completely silent of damage done by wheat and corn industry. And because of that so many ethically conscious people struggle to maintain their weight on highly addictive high carb diets.

Vegetarian diets are not necessarily high in sugars like glucose. There are plenty of low sugar vegetarian foods: vegetables, legumes, mushrooms, etc. You can choose eat a unhealthy vegetarian/vegan diet or a healthy one. AGE are also formed by cooking, so if you are concerned about AGEs, less cooking is better. A healthy plant based diet is naturally high in anti-oxidants which fight free radicals. Many studies have found that plant based diets reduce inflammation.

He's a little painful to listen to. He needs to take a drink of water. All grains have a high glycemic load. I think the paleo crowd is right about grains, legumes and dairy. He has some good points. HFCS came from the Japanese; it didn't originate from the US food industry. The fructose conversion to fat is a function of our enzymes, not an impending hurricane. As i understand it, the old way to treat diabetics is to avoid carbs. i'm exhausted listening to him. overall, fine.

I dont believe atkins type diets are meant to be followed forever, fruits and veggies nuts and legumes have to many chemicals that are beneficial to us, keep the fats you eat from going rancid in your body and protect from inflammation, I am following a low carb diet with no restrictions on fruits, veggies, nuts and legumes, restricting only grains even whole grains, keeping the overall carb caloires down to around 20-25 percent of caloires. fat doesn't make you fat that is a myth.

dude meat is full of Free Radicals, hormones, IGF-1, parasites, Uric acid (aka urine), Nitrates, Polycyclic Aromatic Hydrocarbons (PAHs), Heterocyclic Amines, endotoxins, and AGEs just to mention a few...and causes Inflammation.

ok, but the gentle man said, almost half of humans are lactose intolerant. I have never met anyone in my family or my friends family who ever throws up, or get diahrea etc by consuming milk.

That is true, we can't really digest cellulose, but we don't need digest cellulose to get the nutrients from plants because we chew or cook them to break up the plants cells. Also dietary fiber like cellulose plays other important roles in the digestive process.

Gary Taubes' book is not wrong. I don't know why his incredibly-thorough book you may be negative towards as you so obviously are, I doubt you've read it. You can be a vegetarian and still do Atkins type diets by eating other avocados, peanuts, and various quorn / soya products along with the leafy vegetables and tomatoes, and you don't need to worry about spiking your blood-sugar like you do with high-fruit and certain vegetables. It's a win-win.

George was my teacher way back in the late 80's, where I studied Vegetarian Studies and Nutrition in his program at Miami Dade. It was a great class, and I learned quite a bit, and in turn, it inspired me to write my own course, where I taught vegetarian foods and diet to several local junior colleges in the Chicago area in the early 90's. This was before the advent of Whole Foods, where we only had "ma and pa" health food stores. I miss those days! George still looks great and good to see him!

Study after study has documented the benefits of fiber consumption. Root vegetables also are high in fiber. 100g of raw carrots has more fiber (2.8g) that 100g of kale does (2.0g).

Don't tar all veggies as health food freaks. I know some unhealthy vegetarians and one who is obese. Thanks to the popularity of vegetarianism, it is quite possible to eat junk food and fast food from takeaways, Indian, Chinese, McDonalds, pizza etc, and remain a vegetarian, not to mention cakes, pastries, chocolate, crisps, poptarts, sugary cereals etc.

lol...U r recommending that crappy Gary Taubes book as a resource! haha..that book is about the biggest hoax ever created in the history of "legit nutrition books" ever created. He pieced together dumb studies to in the end claim the Atkins diet is the perfect diet! Taubes is a hack and his science is so easily debunked.

True, vegans can get strokes. There are numerous benefits to a healthy vegan diet, but not all vegan diets are healthy. Many vegans eat very unhealthy diets high in processed foods and unhealthy fats.

Fuhrman: "The American Heart Association recommends consuming 25 grams of fiber each day –a nutritarian diet far exceeds that recommendation, providing about 60-80 grams of fiber each day, since the vast majority of my recommended food pyramid is made up of fiber-rich foods like vegetables, fruits, seeds and beans.". Fuhrman focuses on high nutrient density foods that also have high fiber.

Instead of listening to low carb wackos like Taubes and Ellis, you should pick up a medical textbook and learn how glucose is the preferred source of fuel for the human body. You should also learn how to differentiate between an apple and a Snickers Bar. Processed, sugary foods will cause free radicals and inflammation, however, unprocessed, complex carbs like fruits, whole grains, and legumes will not, in fact, they will protect against free radicals and inflammation.

Actually, most unprocessed carbs in the form of veggies do not raise blood sugar like rice and table sugar. Most are anti-inflammatory from what I understand, due to that nature of alkalizing the blood and fiber. A plant-based diet does not contribute to bad cholesterol from what I have read, and actually reverse and can remove the damage that eating meat and dairy does. I know there are peer-reviewed studies that say this, but maybe you have seen studies that support your diet?

Its hard to know whether in an individual case like this if the person was healthy in spite of the milk or because of it. Humans are the only manual on earth that consumes another species milk. Milk has some good things in it, and some not so good, on balance you are probably better off not drinking it.

BRAVO!! what about high fruit diets, which many people are thriving on, Durianrider is one great example, Dan McDonald is another. anybody have thoughts on how this relates to diets high in refined fructose and other forms of refined sugars. i know that the fiber is a big factor, but bottom line, there are people saying that fruit is no different than eating table sugar, when i know full well that there is OBVIOUSLY a big difference based on what i see in people that eat tons of fruit.

well first of all there is a huge difference between milk 50 years ago and most milk available in stores today. of course the best bet is grass fed, organic, non-homogenized, small farm etc(which i saw in wholefoods today!) have you heard of the pus cell/blood in comercial milk? look that up. notmilk.com has that article i think. i like what i hear about goats milk though. also take a look at "casomorphines". even natural milk has obvious drawbacks. moderation, if consumed at all, is a must.

Totally wrong....there is no evidence that eating saturated fats causes negative health outcomes! The real culprit is refined grains and sugars - fats consumed without carbohydrates actually improve health.

The key to keeping glucose low in a vegan or vegetarian diet is limiting grains and starchy carbs. Get your carb sources from nutrient-dense leafy greens, non-starchy vegetables, lower-GI fruit, etc. Even diabetics can keep blood glucose controlled on a vegan or vegetarian diet - especially if they eat nuts, seeds, etc. in addition to their carbohydrate to get healthy oils and plenty of calories without high glycemic carbs. Ovo/Pesco vegetarians find it even easier to keep glucose low.

as much as I am impressed by the talk, I am havnig a difficult time accepting that natural milk, taken from the animal, boiled and consumed could be anything less than benificial. my grandfather lived to 87 years of perfect health and consumed a big glass of milk evernight of buffalo milk, not even cow milk. No processing of the milk though.

Actually, yes humans get huge amounts of nutrients from greens - it's a misconception that we don't. There is a certain amount of undigested fiber, yes, but there's a considerable amount of nutrients absorbed eating leafy greens and other nutrient-dense vegetable matter. As a saturated fat lover you MUST balance your diet with leafy greens... Even Mark Sisson will tell you that... he has twice a day what he calls a "Big Ass Salad" made with 6cups or more of leafy greens and other veg...

Ricardo, it's a lost cause to try to have an intelligent interchange of ideas with a vegetarian without him or she using word like "wackos", "crappy", "dumb", etc..., they are like religious fanatics and never, ever, are going to admit that a different way to eat than theirs could be right for anybody. I have 4 friends that quit vegetarianism for a better nutrition (their words). It's a lost cause, so I let them live and eat what they want and say like you do, ya ok.
