I love these chocolate pancakes! You would be surprised at just how decadent and rich these are (so good!)
The Best Dang Chocolate Pancakes Ever
Preparation time: 5 minutes
Cooking time: 10 minutes
4 tbsp almond milk
¾ cup ricotta cheese
¾ cup gluten free rolled oats
2 tbsp cocoa powder
1 tsp baking powder
1 tsp vanilla extract
½ tsp coconut oil, melted
Place the rolled oats, cocoa powder and baking powder in a food processor and process until oats are finely ground. Add the ricotta cheese, eggs, vanilla and almond milk and process until combined.
Heat a non stick pan over medium heat.

Pour 1/8 cup of the batter into the pan for each pancake.
When the bubbles start to appear on the pancake's surface (2-3 minutes), flip and cook another minute or two on the other side.
Serve warm with your favorite toppings.
