  • do you think this would work well with coconut milk instead of tomato paste? there is a filipino dish that i love that has butternut squash and shrimp cooked in coconut milk and i wondered if it would work the same way

  • @LauraVitalesKitchen I made this and i thought it was great! so i decided to do this for a class at school cuz we needed to make a soup featuring squash.. but my teacher said that, "Soups should not have any solid particles that you should bite." I was like What the HECK! so now i have a bad grade in class.. :( I still loved this soup though.. :)

  • Great soup! I had never heard of butternut squash soup made this way before. It was delicious. I used orzo pasta and served it in roasted acorn squash, which worked great. Thanks for a great fall/winter soup! (FYI I used half broth, half water.)
