THIS IS THE RECIPE:
Ingredients

Tomatoes
1 to 2 Zucchini (thinly sliced using a mandoline)
Organic Sundried Tomatoes in Olive Oil
Onion
Garlic Walnuts
Cashews
Olive Oil
Celery
Red Bell Pepper
Basil (fresh)
Parsley (fresh)
Oregano (dried)
Lemons
Apple Cider Vinegar
Spinach (1 bunch or 1 pre-washed container)
Raw Nama Shoyu

Spinach

Chop spinach and toss with 3 to 4 tbsp olive oil and 3 to 4 tbsp dried oregano and marinate while preparing other components

Sauce

2 medium size tomatoes
1/2 cup sundried tomatoes
1/2 red pepper
1 to 2 celery sticks
2 to 2.5 tbsp agave nectar
Italian seasoning

Combine everything except the tomatoes then add tomatoes in the food processor then add tomatoes and pulse to desired consistency

Cheese

1 cup cashews
2 to 3 cloves of garlic
2 tbsp nama shoyu
1/4 cup of apple cider vinegar
1/4 cup lemon juice
may need to add water to help blend until smooth

Blend using food processor until smooth.

Nut Meat Layer

1 cup walnuts
Fresh Basil about 2 tbsp
Fresh Parsley about 2tbsp
onion
garlic (1 to 2 cloves)
1.5 celery stalk
1/2 tomato
1 tbsp olive oil
1tbsp nama shoyu
pinch sea salt

Using the food processor, process nuts but still leave a little texture. Add the remaining components and pulse to desired consistency (not all the way smooth)

Assembly

Use a small casserole dish. Place 3 to 4 strips of thinly sliced zucchini in the pan. Add nut meat layer, cheese layer, sauce layer, spinach layer (generous amount), add a little sauce on top of that and then add three more strips of zucchini and repeat the process above. Repeat for 2 layers.
