So I am episcoplian and small church at that. So when does the elevation go? I have seen it played in between Sanctus and Benedictus in 20th century French Recordings but I don't get it, does the priest literally stand there for five minutes holding the bread and wine up??

The rite of consecration of the bread and wine used to be different before the Second Vatican council. I've never seen how it looked back then, but evidently, it took longer than it does these days. Maybe it didn't last more than just several minutes, but some organists, like César Franck, played for much longer than it was needed. Franck was notorious for this, so the priest at Ste Clothilde had a small bell installed in order to signal him to stop playing... which Franck often ignored.

I love this piece it feels like you're flying through the clouds when you listen to it. Every organist should try it out.

I found a great website in the Netherlands with two Volumes of Guilmant's music edited by WIlliam C Carl- is this the one you found as well?
