This info is a bit out of date now. 57x57 is the standard size for iPod Touch and all iPhone 3G models. However, you now also have 72x72 for iPad and 114x114 for the Retina Display on iPhone 4.
Basically, follow the steps here, but make the icon 114x114. This will ensure highest detail for iPhone 4 (believe me, 57x57 icons look crap compared to all the other ones on Retina). iOS is now updated to scale the icon down for the screen it's being used on.
