Yo man, why are you talking crap about shouchu? It's the same about wine vs cognac:

a wine goes bad after it has been opened long enough (post breathing and peaked);

but a good cognac/whiskey/scotch/shouchu/­chinese white rice wine, means that you can keep that same flavor for a very long time even after opening, sometimes up to 10 years!

good overall, best info on sake i've been able to pay attention to. however their regard for shochu is unwarranted. why can't it be a sipping spirit? Taking his example of tequila, there are plenty of examples of quality sipping tequilas with pedigrees similar to sake producers, and don't be caught with your word as a liquor professional declaring all spirits to be mere mixers when the whiskey community come around to trying and buy sake.
