Two years tops for whole spices...considering it took a few months for the East India Company to get those things back to northern Europe from the Spice Islands, no wonder they went so all-out on designing faster ships during the 17th and 18th centuries---made the spices tastier. ;)

@codectified well you already said one, so you dont bite into a very, um, flavorful, bite. Generally speaking if you through whole spices into a dish you remove them before serving. Grinding them prevents having to do both!

I'd hate to be the poor sap that had to count 3000 peppercorns. And that grinder was badass.
