I'M IN LOVE WITH AVOCADOS!! Can't get enough of em! I eat one every day! Taste soooo yummy with greens :)

This versatile recipe is currently my staple! I change up the ingredients and try new things to keep it interesting. Here's my basic recipe, I'll put a few notes after for ideas:

GUACAMOLE

1 clove Garlic; minced
1 green Onion; chopped
2 cups Spinach; chopped (2 cups before cut)
1 large Tomato; diced
1 Avocado; mashed
1 to 2 tbsp fresh Lemon juice
1 to 2 tsp Himalayan salt
Pepper; to taste

Combine ingredients. Refrigerate til served. Keeps for 2 to 3 days in a sealed jar; in the fridge. Serve as a dip or over salad.

IDEAS: Change up the spinach for cilantro. Use yellow onions instead of green. Add chives or other herbs. Make it spicy with cayenne or cumin. Use lime juice instead of lemon. Remove the tomatoes (I like it with lots of tomatoes!) ;)

This is a super awesome recipe and I recommend that anyone that doesn't like avocado... try it!! I remember not liking avocado in the past; I tried it plain and thought it wasn't good (I still don't like it plain). Now I can't get enough of it!! :)
