DEEP FRIED EGGPLANT WITH ASPARAGUS
2 tbsp Ching's Secret All in One Sauce
1 tsp Ching's Secret Soy Sauce
2 tbsp Ching's Secret Schezwan Sauce
1 medium Eggplant cut into cubes
2 sprigs Asparagus cut into 1 inch dices
1 tsp chopped coriander leaves
½ cup water
1 cup Corn flour
Salt and Pepper to taste
Oil to deep fry
1 spring onion chopped to garnish
Method:
Coat the eggplant cubes with the corn flour and deep fry till crispy. Add 2 tbsp of oil in a frying, add asparagus, stir fry for 1 min. Add eggplant, all the sauces and water. Adjust the seasonings with salt and pepper. Mix 1 tbsp of corn flour with2 tbsp of water, add to the boiling sauce till it becomes thick. Garnish with spring onions and serve hot.
