Martha Stewards recipe do not work. Have tried many and they are just plain bad. Yellow cake bad. The chocolate frosting on her orange curd yellow cake is way to thin had to turn it into a buttercream. I think she forgot the butter. Most all recipes in cookbooks by restaurant owners or famous chefs, for the exception of Barefoot Contessa do not work. I mean, why would they want to give away there bread and butter.

He's right you guys, unless you know the "chemistry" behind the cooking then the recipes won't get you far
When I first started baking following what recipes stated, the end results weren't how I wanted them to be.
For example, the recipe may say "Put it in the over for 25 minutes"
But your oven may be too powerful and your goodies might burn if they're in there for 25 mins, so it's always best to know how to tell it's actually good to go

Some people are missing the point. He's not saying Martha Stewart's recipes are bad. But they are reference material. Unless you know the techniques behind the recipe, you may not be able to successfully complete the recipe. Recipes are short-hand. You have to know how to read them and figure out what part of the technique was left out. If you understand what's going on, you can also make substitutions and still get great results. I also recommend Shirley Corriher's Bakewise and Cookwise books.

You think Martha is bad, you should look at the old cookbooks that refer to an oven's temperature simply as "heated" or a measure of lard based solely on the size of some random bird's egg.
