I have tried other fruit pulp cookie recipes but couldn't find one that I liked. I love that these don't have flour,milk or eggs - I can make them for my vegan and celiac friends! I also like the fact that they are raw since cooking destroys so many of the vitamins and enzymes. I used a combination of carrot, apple and ginger pulp in mine.
Best juicer pulp recipe I've found so far.

Great recipe - I tried it and it does taste very good. I would add a bit more agave though to make it slightly sweeter. Otherwise, wonderful idea - thanks for sharing!

but which is worse? High sugar or high fat? This is DEFINITELY high sugar!

maple sugar has some sugar in it, but this is a much more nutritious way to enjoy something sweet than eating a cookie, piece of cake or pie.
