Ingredients - Suitable for 2 people

JCN Rosette Salami
Ciabatta roll or fresh baguette
avocado
tsp low fat mayonnaise
lemon juice
mixture of fresh herbs
1 x tomato
tbsp capers
handful of black olives
Method

1. Cut a fresh Ciabatta roll or fresh baguette in two and remove the dough from the inside. The best way to toast the bread is in a very hot pan.

2. Place some soft avocado in a bowl and mix the avocado into a puree with a spoon. Add a tablespoon of low fat mayonnaise and a squeeze or pour over a teaspoon of fresh lemon juice. Grind some black pepper into the mix and add some fresh herbs if you have them to hand. Finally spoon the mixture onto your toasted Ciabatta bread.

3. Using your empty bowl add one chopped tomato, a pinch of ground black pepper, one tablespoon of capers, a small handful of black olives without pips and crush in one clove of garlic.

4. Chop four slices of Rosette Salami on a wooden chopping board and add to the tomato mix. Spoon over your mayonnaise mix on the Ciabatta bread and serve.
