Fuzz is contamination. You need to throw it out and start again. Add a tablespoon of applecider vinegar next time to keep the pH low enough to prevent mold growth.
It taste tangy, and may have a different taste depending on the tea used. Green is very neutral and light in flavor. Black tea has more flavor I think. I like using Oolong for a complex color and flavor. More or less the color lessens as it ferments around 30 days, and once it comes out of a two week bottle ferment to make tea fizzy the color is lessened by about 25%. My green tea came out very light-- almost like a white tea. You can also flavor it when put in bottles with fav. juice.
@666zombiemaster If fuzzy stuff is growing on the surface of the scoby, it is bad. I would throw all of it out since you risk drinking possible end products made from mold bacteria which may be toxic. A good idea when starting a new batch is reserving some kombucha tea from old batch to help the new one along... most contamination occurs when the pH is initially near neutral or basic. I hope you try again. It's some great stuff!
i have a ? my scoby has been in its jar for a week, but its got lots of brown fuzzy like algae all over it. but a new mushroom is forming on top, so can someone tell me if its healthy, or growing MOLD????
the holes appear as CO2 [created by the yeast mainly] rises under a forming 'mushroom' layer. and break thru occasionally. some of mine have ended up with all the bubbles running out to the sides. others have ended up with a few holes here and there.. your brew looks healthy AS. well done..
Um it looks normal and healthy; you should only see white or brown. Those blister like bumps are normal. Mine had them too! And although it looks like a disease is taking over, your KB will come out great. May second is when my bottled KB will be ready to drink... first time brewing too.
