Any kind of hot pepper (green chili) will work. You can easily find cumin powder in the spice aisle of your local grocery store or at any Indian grocery store.

Will it make a difference if i use Mozzarella cheese instead Monetary for garnishing?

Mozzarella is usually a little more stringy than Monterey Jack so it may become rubbery in the soup.

Can you omit the mushrooms or does that affect the flavor?

You can definitely omit the mushrooms...if you don't like them, you won't miss the flavor.

Chipotle can be found more often in a can. The most common brand is "La Costena," but there are others. You can find it at your local supermarket in the Hispanic or Latino isles. You can also use chipotle and mix them with mayonaise and add that as a dressing to your fish tacos... Yum!

Good call on the Bay Leaf. Most people forget the Bay leaf but its an important flavor that should be in there. :)
