how to unfreeze or restart ipod touch or iphone

This is a simple thing to do. press the two buttons until it goes off. this will work if the screen is blank or frozen.

I tried doing that because my screen froze but then when the apple logo came out, a few minutes later the loading symbol popped out in front of the apple logo and it freezes there. It stays there and i can't do anything else, can you help?
