Recipe: Guacamole
Chef: Martin Cabrera
Yield: Serves 5 people

Ingredients:
4 ripe avocados, seeded and peeled
2 tablespoons of lime juice
1 garlic clove, crushed
1 tomato, finely chopped
¼ cup onion, finely chopped
⅛ teaspoon ground cumin
¼ teaspoon salt
2 teaspoons of cilantro

Method:
Using a fork, coarsely mash the avocado with salt, lime juice and garlic and add the remaining ingredients in a bowl and serve with chips.

Recipe: Chicken Wings 'Al Pastor' Style
Chef: Martin Cabrera
Yield: Serves 6 people

Ingredients:
1 Small can Chipotle Peppers
1 Yellow Onion coarsely chopped
1 cup orange juice
5 garlic cloves
8 Guajillos chiles
1 teaspoon ground cumin
5 lbs Chicken wings
1 bunch of cilantro
2 cups of pineapple diced

Method:
Coarsely chop 2 pineapple rounds, discarding core; cover and chill remaining pineapple. Place chopped onion and chopped pineapple in the jar of a blender. In a pot with boiling water put the guajillos for 10 minutes or until they become soft. Take them off from the water and steam the chile. Put them in a blender and and add the remaining ingredients: orange juice, vinegar, guajillo chile, garlic, salt, oregnao, cumin, chipotles and adobo. Puree the marinade until smooth. Place chicken wings in a large resealable plastic bag. Add the marinade and seal bag releasing the excess air. Turn to coat. Chill for at least 1 hour.

Preheat the oven to 425 degrees Fahrenheit. Line rimmed baking sheet with aluminum foil and lay a wire rack inside. Arrange chicken wings on rack leaving a little space between each wing. Brush them with the marinade. Place them in the oven and cook until deeply browned, about 45 minutes.

Garnish with the cilantro and the pineapple.

Recipe: Sincronizadas with Carne Asada
Chef: Martin Cabrera

Ingredients:
1 dozen of 6" flour tortillas
4 lbs of skirt steak
2 cups of chihuahua cheese, shredded
2 cups of sharp cheddar
4 teaspoons of cumin
4 teaspoons of brown sugar
4 teaspoons of smoke paprika
Salt and pepper
1 cup of guacamole

Method:
Rub the skirt steak with the spices and put it back in the fridge for at least 1 hour. Have a grill ready at high temperature and frill the steak to a medium level. Put off to the side and cut the meat against the grain at an angle.

Put sliced meat off to the side. In a saute pan, add 3 teaspoons of olive oil and set to medium high heat. Add the tortilla topped with cheese and steak and put another tortilla on top, like a sandwich. Crisp the tortilla at the bottom and flip the top until both sides are crispy. Serve in a platter cut in equal segments and topped with avocado.
