Ingredients
4 medium carrots, peeled, halved
1/4 small onion, peeled
4 small garlic cloves, peeled
2 tablespoons (30 ml) oil
1/2 teaspoon salt
pinch white pepper
1 tablespoon fresh ginger root or Ginger Paste
1/3 cup (70 g) light silken tofu
2 cups (480 ml) low sodium vegetable or chicken broth
Directions
1. Place carrots, onion and garlic into the Vitamix container and secure lid.
2. Select Variable 1.
3. Turn machine on and slowly increase speed to Variable 4 or 5.
4. Blend for 10 seconds or until chopped.
5. Heat oil in a small pan and sauté chopped ingredients until onion is clear and carrots are tender. Add a little broth, if needed.
6. Place remaining ingredients into the Vitamix container, add sauteed ingredients and secure lid.
7. Select Variable 1.
8. Turn machine on and slowly increase speed to Variable 10, then to High.
9. Blend for 4-5 minutes or until heavy steam escapes from the vented lid.
just got my vitamix couple of days ago. wow, the soups and fruit desserts. it's no lie, in seconds, with clean up even easier. just love it! will probably be able to lose those extra pounds in 2012, with a much healthier diet. with my soups, not worried about it coming out of the vitamix piping hot. I will blend or mix my soup, and afterwards, add pre-cooked 12 bean mix and heat in the microwave for 3 minutes. add seasoning for taste, and an awesome meal follows.

@ChrysinaStevens Not raw. Vegetable stock is cooked, and she said "carrots, onion and garlic" were sauteed. Then she runs the Vitamix for 4-5 minutes. After 4-5 min. in HIGH speed, believe me, everything will be steaming hot. This is not a criticism, just an observation and clarification. I'm on my 2nd. Vitamix blender. I use mine everyday, at least 2 x day. I don't know what I would do without it.
