  • Would you recommend changing the steamwand? Would a different hot water wand mod make a difference? Thanks again.

  • @adimperial. For more steam I would recommend changing the steam valve (Izzo ball joint valve fits) together with a no-burn steam arm. There's a standard no-burn arm out there used on the Giotto/Cellini Premium, QuickMill Andrea and the new Izzo Vivi/Alex.

  • I have a Mazzer Mini I used with my Silvia. Should I sell it and get a Baratza Vario? I'm kicking myself because someone locally (a caterer) wanted to trade her Super Jolly for a Mini. I declined b/c I liked the size of the Mini. :( I didn't know it was a superior grinder. I just thought it was a bigger version of the same grinder.

  • @adimperial. The Vario and Super Jolly is superior to the Mini. The Vario may have the advantage as a multipurpose grinder for the novice (espresso+french press and drip) but as experienced user you would probably prefer a dedicated espresso grinder. The timer is great on the Vario but the Super Jolly will outlast it hands down.

  • Great vid! I just bought the exact same machine virtually new from someone who used it a couple of times then kept it in his pantry for the past few years. Is $700 after shipping a decent price? (initially 900, but he took 200 off since I thought I was buying the Premium, according to his auction picture. I love your style and routine-I'll try my best to copy it.. It will probably take me 30 minutes to do what you did in 5.)

ps: Why do you bleed the steamwand before pulling the shot. thx

  • @adimperial. Thanks! Congrats on your Giotto! Seems like an OK price if it hasn't been used. With a little care this baby should serve you for years.

  • Where did you source the parts for doing this mod?

I want it too, looks very good!

  • Grind setting would vary from grinder to grinder. Mine is about 4 notches below the factory sticker. But bare in mind that I use the Dura-mill burrs which are a bit thicker, so that changes the picture even more. My favorite tamper is a no-name 58 mm wodden tamper with flat stainless base. I also have an Xpressivo Barista convex.

  • can you please tell me what grind setting your using?

also what tamper your using? mine is so horrible!

  • I have the same Giotto espresso machine.

I love it so much. Since we've had it for years and runs beautiful only recently the one for hot water

some how is plugged / no water seems to come out. other than that I could say I can't live without it. Family and friends love it to an always want

    espresso, latte and cappuccino's

it's the investment to have one.
