I'm Eating What?!?!

GM Purple potatoes, modified to release anthocyanins and for shorter cook time. Just to show my audience that they're completely safe (suck it, anti-GMO supporters). Also, they're apparently great for energy, if I've interpreted what I did correctly. But a lot of it is released in the boiling process. The polysaccharides (complex sugars) break down into simpler sugars when exposed to citric acid, ie. lemon juice. I didn't even think to do the experiment intentionally, but accidently (I was adding lemon juice for flavor). The water from the potatoes was a greenish color on its own, but it turned orange when just a little bit of lemon juice was thrown in (experiments used to check for simple sugars involve adding dyed chemicals , which typically are blue, but will turn colors if certain stimuli, like heat or an acid, are added in to break the sugars down). It didn't taste as good (potatoes and lemons, I don't know, it just doesn't do it for me) so I didn't drink it, but before I did that, bits of potato aside, it wasn't bad.

@lenoka Yeah, I know about the background color. It's actually the camera, not so much the lighting. It turns everything a bluish color.

I saw them in a Dirty Jobs--there's a small potato farm Mike visited that grows a bunch of specialty breeds. One was the purple.
