This bread is great but the crust gets very hard after a while. Is there any way to make it softer?

You can put the bread in a plastic bag after it cools down. And next day the crust would be somewhat softer than freshly baked. But the crunchy crust is what you are looking for, isn't it?

I dont have a cast iron pot but i improvised and everything worked out great and im happy with the bread. I was wondering though if not pre heating the pot would yield a softer crust.
Also if i wanted to flavor the bread, say with garlic, at what point would i introduce garlic into the dough?

I think you can add smashed or chopped fresh garlic when you mix the flour and liquid. But adding garlic when you toast a slice with olive oil would be better way to have more garlichy flavor. Though if you add garlic at the beginning, that will be something different. I've never tried that way. I don't think I want a whole loaf flavored with garlic.
