A simple technique to serving some of the best sweet potato puree, I like to keep it simple by using the best organic sweet potatoes I can find. Seasonally this is the time for the yams, be sure to choose ones that are firm and have some weight.


Ingredients


• 4 cups Water
• 2 tablespoons brown sugar
• 2 tablespoons Kosher Salt, plus more for seasoning
• 1 tablespoon freshly cracked black pepper, plus more for seasoning
• 1 pinch grated Cinnamon
• 1 pinch Ground Nutmeg
• 1/2 lb Unsalted Butter
• 3 to 4 sweet Potatoes
• 3 tablespoons heavy cream


Directions

In a medium saucepan add your peeled Sweet Potatoes, 4 cups of water, 2 tablespoons sea salt. Stir mixture and bring to a boil.
Cook for 15 to 20 minutes until soft until the yams are soft. Strain the yams into a Potato Ricer and rice them through... Place the puree into a mixing bowl and add the butter and the spices. You may add some cream if needed. Season with salt and pepper, to taste, and serve warm.
