The song's about change. The lines "It can burn, it can blind you all" and "It will not set tonight" refers to the double-sided nature of change and the fact that it is an inevitable occurance respectively. In other words, you can't stop change from happening anymore than you can stop the sun from rising and setting.
Of course I imagine Rammstein intended the song to be a rorschach of sorts, so this is only my opinion.

My theory is that light means hope, like "jesus is the light of the world" and jesus is a sign of hope. so maybe its hope of release from a mental/physical torture or hope of a better life.

The Sun is a metaphor for the light, basically a better life. Its a very political song when thought about
