How To Make Chocolate Cashew Clusters
Ingredients:
1 teaspoon Vanilla Extract
2 Tablespoon Water
3 oz Marshmallow Cream
½ Cup Smooth Peanut Butter
12 oz Chocolate Chips
2 Cups Cashews
Instructions:
In double boiler at medium heat (water just barely steams) add Vanilla and water.
Add Marshmallow Cream and slowly stir until melted and a smooth consistency.
Add Peanut Butter and slowly stir until melted and a smooth consistency.
Add Chocolate Chips and slowly stir until melted and a smooth consistency.
Add Cashews and slowly stir until melted and a smooth consistency.
Lower heat to between medium and low. You don't want the heat to crystallize the Chocolate.
Use a teaspoon to place patties onto cookie sheet or aluminum foil.
Still ingredients in pan often to keep well mixed and avoid over heating.
Continue to place teaspoon size patties onto cookie sheet.
Should make about 3 dozen.

I've never tried marshmellows. Suppose you could test melting 1 marshmellow and see if it melts.
Check with a grandmother (old person) who does a lot of baking, I'm surprised you don't have marshmellow cream in Australia. It is in our normal food store, although not always in the baking department. Ask your food store manager.
If you don't have any luck, I could check into sending you a jar myself.
