@shelties100998 Dude, you really should strive to never eat anything growing near any road that has motorized vehicles on it regularly. Cattails are common water plants; wet, swampy, mushy soil near water is where you find them, so get out there in the swamps and away from that disgusting road ;D

Hi Nancy, you should try this nifty little trick. Before you pull the leaves, cut the stem right at the "notch" of the second leaf from the bottom (the point where the two sides of the leaf meet and cross over one another) I find that the cattails that grow near me almost always have good firm pulp right up to that point, and the then plant sort of transistions into the more layered structure. What's also nice about this is that you can judge by the height of the notch how much pulp is in there.
