I exclude the milk and replace it with a bit of water and another tbs of butter.
It's important to salt the water.

dude i like to cook the butter and milk and powder first and add some cheese,. make a sauce, then add the mac! My father in low sucks at mac and cheese, his is overcooked and tasteless, i don't know how he does it every time!
