It's not bad service. It supposed to be loud. It is to let you experience the real lao beijing zha jian mian. If you do not wish to hear the loud sound, you can always ask them not to bang the plates. ;)

a recommendation,
keep the vegetable aside, mix the sauce with noodle first, then place the vegetable on the mixed noodle.
Keeping vegetable for original taste is better.

Yes!而且老北京的服務生應該說動作很粗魯,小碗就因為放的很大聲之故,結果小碗呢就一個個都有破裂的缺口說﹗
所以咧,劉家大院的服務品質比老北京好﹗
