蝦醬空心菜 詹姆士 「五分鐘出好菜」

食材:
空心菜400g、大辣椒1根、去皮大蒜3粒、紅蔥頭5粒、乾蝦米10g、罐頭高湯2匙、蝦膏1塊、沙拉油

調味料:
泰國魚露1匙、泰國蠔油1匙、砂糖1匙、白胡椒粉

做法:
1.挑出空心菜的老梗、留嫩葉和梗,備用

2. 【製作蝦醬】:起調理機,放入大蒜3粒、紅蔥頭5粒、蝦米1大匙、蝦膏+沙拉油(1:3),混合打勻後倒入平底鍋中以小火炒勻加熱後取出,備用

3.備料:蝦米2大匙切碎末泡熱水、蒜拍碎、辣椒切小段

4. 醬汁:泰國魚露+泰國蠔油+少許高湯+砂糖+胡椒粉+開陽水

5.起鍋熱1大匙油,爆香蒜頭、蝦米碎、辣椒,放入空心菜、醬汁拌炒均勻,最後淋入調好的蝦醬2湯匙翻拌入味即完成。

小叮嚀:
1.以大火快炒,鍋子的溫度一定要高;以不讓空心菜炒塌了
2.炒之前,注意先摘菜,把細的部分先挑出來
3.炒的過程中,加入蝦醬的時機要注意把握
4. 自製蝦醬多餘的可放於冰箱冷藏或冷凍保存
蝦膏在泰國食材行或一些較大型的超市量販店就有販售
