    I looked it up and what i got out of it is this

    They have one or two extremely skilled cameramen capable of keeping up with the contestants, who hide when they need to and stuff. When something happens that they would like to reshoot, they make a note of it. After the shooting, they re-enact what happens, but they do it as exact as possible, no glorification. That's also when they do the helicopter shooting.

    I don't see anything wrong with that method as long as everything is honest. :)
