@kratiras Hello Kratiras. Thanks for your response. I am a volunteer at Radha's Kitchen. Our school is located in Costa Rica where Greek feta imports aren't always available. I think that whenever we can get the real authentic cheese, we definitely try to use it, but it really depends on what is on the shelves from day to day. Our courses are geared towards home cooks who are often beginners and usually an approximation will do in somewhat restricted circumstances.
