@va3svd, well...very few places are going to cook the fully-authentic way when it comes to jerk, because as you already know, it is a long process, and pimento wood/leaves aren't exactly readily available year-round in the U.S. so it is very expensive. This doesn't only happen with Jamaican food, most food served in restaurants outside of their country of origin is rarely prepared or served in the true traditional way. In reality it boils down to convenience, budget and profit.
I can guarantee that Shrimpy uses all fresh herbs... his sauce is better than anything on the market. Im marinating my turkey with his sauce this year...
Dried herbs? Store-bought seasoning? Not going to cut it. Chef Shrimpy needs to learn fresh, local and authentic as his culinary philosophy. Jerk marinades are so strong and flavourful, why sell it short with dried herbs?
