Galacta Knight, from Kirby Superstar Ultra. Awesome boss fight, and awesome music, great to hear his theme again. Was my 2nd attempt at fighting him. To fight him, reach round 13 in the True Arena, unlocked by beating the game on Extra (Hard) mode.
