Simple to make and delicious to eat, muffins can be a super healthy snack (or breakfast) for kidsif you make them with healthy whole food ingredients! Unfortunately your average everyday muffin (both store-bought and homemade) is not very healthy. Most muffins contain an excessive amount of sugar, unhealthy oils (usually some sort of highly refined vegetable oil) and refined flour. In other words, most muffins are really just cupcakes in disguise. And sure, kids love muffins---because kids love cupcakes! While I seriously doubt any child will mistake these muffins as cupcakes, they are still tasty, they are absolutely healthy and your kids will eat them (especially if you let them help out by measuring the ingredients and mixing the batter!)
You can feel good about yourself giving these Double Chocolate Walnut Muffins to your kids pretty much anytime of day (you can even feel guilt-free eating them yourself!) Blake loves them for breakfast and after school snack (especially delicious when served warm and topped with all-natural peanut butter or almond butter.) In comparison to your average muffin recipe, this version contains less than half the amount of sugar. Instead of sugar, most of the sweetness (and added moistness) comes from the two potassium rich bananas. Its also spiked with omega-3 rich flaxseeds and walnuts plus nutrient-rich wheat germ, its made with wholesome white whole wheat flour (which has the same nutritional value and fiber content of its darker cousin---but just a lighter texture and color) and contains probiotic yogurt in place of milk. Instead of highly refined empty calorie vegetable oil Ive substituted antioxidant-rich extra virgin coconut oil; not only is extra virgin coconut oil a highly nutritious oil but its also very heat stable and a fabulous stand-in for butter (and it tastes SO much better than vegetable oil!!) And finally, most of the chocolate flavor actually comes from antioxidant-rich unsweetened cocoa; the recipe only uses half the amount of chocolate chips called for in most chocolate chip muffin recipes. These look really good -] Should I substitute the white flour to whole wheat flour? Will it taste the same??

Hi! you can substitute white flour but it won't be as healthy as if you use white whole wheat flour! the whole wheat flour has more nutrients and more fiber! but, if you are strictly going for taste you can definitely use the regular white flour.
btw, i'm Blake's mom---i noticed your email is "gymnastics" lover---what a FUN sport!! i'm 34 now but i was really into gymnastics when i was younger =)
