"stir into your chocolate mixture" the mixture needs to be at quite a cool temperature. i would suggest putting it in the fridge for a bit before mixing in the cream.

Traditional mousse is always made with egg yolks. Anyone who says otherwise is full of shit.
French pastries use a lot of butter and egg yolks. Even traditional French buttercream icing is made with egg yolks.
