Hello it call cleansyness, which i hope you did clean the counter with some good product and rinsed the counter prior to doing gnoochi on it.

The reason to make the pattern (usually by rolling over a fork to create grooves) is to enlarge the surface area. Allows for more of the sauce to stick to the gnocchi.
Or: Maybe it just looks nice ;-)
