After the first time I beat him I was on the second day, so I needed to be on the first day to start the quest for the sword, and if you go back in time you gotta beat him again so that the snow area changes to spring.

From a little test I done I found out the Gilded Sword is stronger than the Master Sword. Different games but I did kill the same enemies and both games have the exact same engines so I believe it's a fair test.
