Steinberg Imagery presents it first initial cooking insight by Mr. Eric Sternberg.
In this first installation, Mr. Sternberg preps mirepoix for dishes to be used later for his family.
Mirepoix is used as an aromatic condiment when making sauces, stocks, soups, stews or braising meat. Specifically, mirepoix is a combination of two-parts onion, one-part carrot and one-part celery. Mr. Sternberg prefers to make the diced ingredients small and uniform as possible for ease of aesthetics and uniform cooking.
While Mr. Sternberg uses olive oil to sweat the vegetables over low heat to reduce the water content, many online sources mention butter....mmm, butter. Some even skip the sweating and mix the ingredients and use raw.
Mr. Sternberg is a local cook freelancing his charcuterie skills for small catering events and local San Francisco restaurants.
Footage was created on a Nikon D90...not bad but I am looking forward to utilizing the Nikon D7000 next month.
