Very nice recipe. I love cilantro, but I've never added it to a herb butter mixture before. I will certainly try it.
I usually mix butter with grainy Dijon Mustard, sage and garlic. It's just spectacular on a steak.

Is there a way of doing something similar in the oven? I live in an apartment and we're not allowed to own grills :(

should the butter be room temp?

yes....it makes it much easier to mix at room temprature. if you forget to take your butter out before getting started and have to work with cold butter, you can put your stick of butter in the microwave at 50% power for 10-15 seconds.
