Steak with sauteed radish and savoury butter, cooked by Xanthe Clay in just five minutes.
2 thin cut sirloin steak
Heat a griddle to very hot. Rub the steaks with salt and cook for a minute or two on each side. Serve with the radishes and savoury butter below.
Sautéed radishes: * 7oz/200g radishes * 1tbsp butter * half tsp sugar * half a bunch flat leaf parsley, leaves only
Cooking radishes this way makes them taste like the sweetest baby turnips.
Cut the radishes into quarters.
Melt the butter in a frying pan and add the radishes.
Sprinkle over the sugar and a pinch of salt and a grinding of black pepper and sauté briskly for three minutes.
Add the parsley leaves and sizzle for another minute, then tip onto your plate and eat.
Savoury butter: * 2 anchovies * half a clove of garlic * 2tbsp butter * 4-6 sprigs of parsley, leaves only
Whizz together in a mini blender.
