In this recipe segment taken from Episode #111 of the Hippy Gourmet TV Show, we feature a recipe from the Farmer John cookbook "The Real Dirt on Vegetables" - which is Kale Pesto, and then The Hippy Gourmet blends that with his famous Paprika Roasted Potatoes.

  • Looks incredible but why not microwave the kale? It seems like I'd lose a lot of nutrients from boiling.

  • @halk11 Microwave ovens are a great convenience, but you do have to be aware of potential dangers. Personally, we avoid using microwaves. You can always steam kale as an alternative.

  • that's Cuisinart, it's a brand name for a food processor

  • Oh, so simple but looks good. I'm not vegetarian so I'm going to add a part two T-bone steak to that :)

  • For a vegan pesto I would add veggie shreds instead of parmesan cheese.

  • 10 minutes for kale? The enzymes are totally dead after ten minutes of boiling any food. You totally don't need to cook it that long. Just long enough to make it bright green and tender, maybe 3 minutes tops! Also, soaking walnuts instead of toasting will release enzyme inhibitors (and any bitterness) and makes them easier to digest.

    Otherwise, great recipe!
