joe, Cosentino IS a remarkable chef, but Symon is a certified MASTER CHEF with a wealth of knowledge and ability as well. Cosentino got cut for the same reason Nate Appleman did this year: he relies too much on his mastery of offal. Sadly for him, there was another pork enthusiast who did things just as well.
